Just a quick post of a bit of healthy yumminess …
Sometimes dieting just sucks!!! I know it is a lifestyle change but often my taste buds revolt!
I was feeling hungry for a little healthy crunchiness while I was dieting and was ‘allowed’ fruit and vegetables over and above my soup on that day so….. this is what I came up with!
Salad of tossed mixed greens, romaine,
spinach , dressed with tomatoes, cuke, pink grapefruit, pomegranate, apples, and craisins!!
The dressing was a fresh raspberry vinaigrette I created..
This would be a forgiving salad… put what you like in it and take out what you do not like… I think the key would be not to overpower the flavour in the fruit.
I would like to add some pecans or walnuts next time, Yummy!
I found it very satisfying and a really nice combination of texture and flavour.

Marmie’s Delicious Salad with Fresh Raspberry ‘Vinaigrette’
The Dressing
Mix the following in a jar and shake until creamy, set aside.
2 cups previously frozen raspberries, thawed and unsweetened (I do not de-seed)
8 packets of stevia natural sweetener (8 teaspoons)
1 1/2 Tablespoons Dijon mustard (start with less and adjust to your taste)
1/4 – 1/2 cup rice vinegar (again… to taste… I like tart)
4 Tablespoons Canola oil
1 teaspoon dried Thyme
2 Tablespoons Poppy seed
Greens and More
I used roughly a total of 6 cups of greens , a large handful per serving
1/4 quantity baby spinach,
1/4 quantity mixed greens,
1/2 quantity romaine lettuce
3 very thin slices of red onion
1 peeled, seeded, chopped pink grapefruit,
1 apple unpeeled, chopped..
(mix apple together with the grapefruit juices so it does not brown,)
1/4 sliced English cucumber
1/4 chopped tomato
1 stalk sliced celery
Toss salad gently in dressing
Sprinkle on top of the greens…
2-4 Tablespoons pomegranate seed
2 Tablespoons dried craisins, raisins or choice..
and serve!!

My mouth is just watering looking at that salad and the recipe. I think I would love it! And I would count it as basically a “free” food item, since I call veggies and fruits free, and a little salad dressing doesn’t count, either. I would eat a LOT of that! You are so creative.
